Exchange ActiveSync - Change from Stock App to Gmail

Is there a reason why exchange defaults to Samsung's stock email app when setting up an exchange email?

I was able to use Gmail for exchange on the OnePlus 3 but on my Note 5 it's giving me a server error.

Any ideas?
